Soto Ayam Lamongan (Indonesian Turmeric Chicken Soup a la Lamongan)

Quite a ubiquitous dish in Indonesia, but pretty hard to find one that is done right. So, I make it myself!
Soto Ayam is a yellow spicy chicken soup, commonly served with rice and/or vermicelli, commonly found in Indonesia. Turmeric is added as one of its ingredients to get yellow colour and distinct flavoring. It is probably the most popular variant of soto, a traditional soup commonly found in Indonesian cuisine. Besides chicken and vermicelli, my kitchen's version will serve it with hard-boiled eggs, slices of fried potatoes, shredded cabbage and bean sprout. Topping will include spring onion and fried shallots and prawn crackers. The spices will be of Lamongan (an area in East Java provice) style.

It was my very first KitchHike and I really enjoyed it. Tari-san is a warm-hearted and friendly lady who speaks fluent Japanese. She kindly explained us details of each spices and herbs, where we can get them in Tokyo, what's the tips for Indonesian foods, etc...
Trust me, once you try Tari-san's meals, you will get addicted to Indonesian foods!

Tariさんのあったかい人間性がそのままお料理になったような、とってもおいしくて楽しいごはん体験ができました!
いろんなお話も聞けて、「今日はずっとここに居たいなぁ…」と思ってしまったくらい(笑)。

Tariさんのおもてなし、料理レベルに驚愕!!
美味しさだけではなく、盛り付け、見せ方はレストラン並みでした!!
前もってお料理の作り方を教えて欲しいと伝えていたので、わかり易いように準備されていてお料理教室のように手際よくそして、丁寧な説明で教えてくれました!!
出来上がったお料理はもちろん美味しさに溢れてましたし、気さくでおもてなし上手なTariさんの会話で本当に素敵なランチを過ごす事ができました!!また行きたい!!

Tari was born and raised in Indonesia (except for the few years spent in Bangkok Thailand during her childhood), but has spent all of her adult life in Tokyo until she recently moved to New Jersey. She is a passionate traveler and a somewhat-health-conscious foodie, a rebel cook at heart who never follows any recipe to the t, radically adapting any recipes to her liking and also to what is available in her kitchen.
There are too many wonderful foods that Tari is unable to choose one as her favorite. Other than her native Indonesian, Thai would be her favorite cuisine. As far as cooking techniques go, French cuisine fascinates her, and the philosophy of Italian cooking also excites her.
Her cooking inspiration will always be her beloved Mama and Jamie Oliver.
